Ballymaloe’s sea water new potatoes

I was sceptical about this at first, but using sea water to boil new potatoes is amazing – they taste really fresh and just like the sea. Grab a bucket of sea water from a clean beach – the water will boil so there’s no worry about nasties in there.

Serves 4-5


900g (2lb) freshly dug new potatoes
1.2 litres (2 pints/5 cups) sea water or water with salt
a sprig of mint

Bring the water to the boil. Scrub the potatoes really well – all the lose skin should be removed. Add a sprig of mint to the water, and then add the potatoes. Cover the saucepan, bring back to the boil and cook for 15-25 minutes depending on size.

Drain and serve immediately in a hot serving dish. Yum!
